In my effort to be more of a mornings person, I’m trying to make my mornings as easy as possible. One way I’m doing this is by having quick breakfast options.
One easy make-ahead breakfast is muffins. They are great even when you have somewhere to be in the morning and need to grab and go. Store-bought leave something to be desired in taste and ingredients. My husband has been really enjoying the chocolate chip muffins from a local coffee shop but I wonder about the ingredients and that cost adds up.
He was very excited when I said I was going to make him some homemade chocolate chip muffins and they didn’t disappoint. They make a really nice breakfast treat.
We really enjoy having a muffin and some bacon on Saturday mornings. It’s our time for more laid back breakfast and we like to have a little treat like these muffins.
How to Make Chocolate Chip Muffins (Bisquick or Homemade!)
One of the reasons I love these muffins is because you can make them so easily either using Bisquick or my homemade baking mix. I always keep some of the homemade baking mix on hand for recipes like these muffins and other delicious recipes.
Since you use a mix you’ll only need a few ingredients. Even if you don’t have any of the baking mix made up it doesn’t take long to whip up either and you can make a big batch so you can make other recipes with it as well.

Now let’s talk about this delicious chocolate chip muffin recipe!

You will need these ingredients:
- Homemade Baking Mix (or Bisquick)
- Sugar
- Milk
- Egg
- Coconut Oil
- Vanilla Extract
- Semi-Sweet Chocolate Chips
- Optional: brown sugar
Once you have gathered all of the ingredients you will need, you’ll want to preheat oven to 400 degrees. Also be sure to get out a bowl, a muffin pan, and a large spoon.
Now mix sugar and baking mix (or Bisquick) in a large bowl. Once they are mixed add in your wet ingredients. You want to make sure they are combined but don’t have mix them. Now just fold in chocolate chips.
Scoop the mixture into greased or lined muffin tins. I like to use an ice cream scoop for this part. It helps you get the same amount of batter for each muffin and creates less mess.
You can also sprinkle a little brown sugar on top of the muffins. It’s a tasty addition but they are still good without it.
Bake your chocolate chip muffins for 16-18 minutes, until golden brown. Let them cool on a cooling rack and enjoy!
How to Freeze Chocolate Chip Muffins
These delectable chocolate chip muffins not only satisfy your cravings fresh out of the oven but also make for a convenient freezer-friendly treat.
To freeze, allow the baked and cooled muffins to rest on a wax paper-lined cookie sheet until completely frozen. Once solid, transfer them to an airtight container or freezer bag for longer storage.
When you’re ready to indulge, simply thaw the muffins overnight in the refrigerator or warm them in the microwave for a few seconds. You’ll find that they retain their moist, tender texture and irresistible flavor even after being frozen, ensuring every bite is just as delightful as when they were first baked.
Chocolate Chip Muffins
Moist, fluffy, and bursting with rich chocolate chips in every bite, these homemade chocolate chip muffins are perfect for breakfast, snack time, or any occasion.
Ingredients
- 2 cups homemade baking mix (or Bisquick)
- 1/3 cup sugar
- 2/3 cup milk
- 1 egg
- 2 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 3/4 cup semi-sweet chocolate chips
- Optional: brown sugar to sprinkle on top
Instructions
- Preheat oven to 400 degrees
- Mix sugar and baking mix.

Giant yums!!! I make GF chocolate chip muffins often, as they’re a firm fave of Tony’s. Sometimes I’ll shake things up and add peanut butter or butterscotch chips into the mix as well. A triple chocolate with dark, milk, and white chips is fab, too.
