Mini Mint Cheesecakes

  • 1 1/4 cup finely crushed Back to Nature Fudge Mint Cookies about 16 cookies
  • 4 tablespoons butter melted
  • 16 ounces cream cheese softened
  • 1/4 cup sugar
  • 1 egg
  • 1 teaspoon peppermint extract


  1. Pre-heat oven to 325 degrees.

  2. Line muffin tin with cupcake liners.

  3. Combine cookie crumbs and melted butter. Divide in the muffin tin equally. Press down gently with a spoon.

  4. In a stand mixer blend cream cheese and sugar until smooth and creamy. 

  5. Add the egg and peppermint extract; mix just until incorporated on low. 

  6. Spoon cream cheese mixture over the cookie crusts, dividing evenly.

  7. Bake for 25-30 minutes, until set.

  8. Remove from oven, let cool and remove from pan.

  9. Chill for several hours or overnight, enjoy!
