I love pizza but I’m also allergic to mushrooms which can make it a bit hard to get pizza out. Many places can handle the allergy with no issues but the chains struggle and I love pizza but it’s not worth dying over.
Making pizza at home is often a safer and cheaper option. Plus you have control over the ingredients and that’s also important to me. I try to avoid nitrates as they aren’t great for you and often trigger headaches for me. But bacon and pepperoni are delicious so I’m thankful for uncured options I can put on my pizza at home.
I used to do a good job of making pizza dough from scratch and freezing several crusts. I haven’t done that in a few years and don’t see myself making time for that anytime soon.
A quicker alternative that is also delicious is these mini deep dish pizzas that are made using Bisquick (I use a homemade Bisquick).
They aren’t traditional pizza but the flavors are still there and they are simple to make. The other day my husband was having a frozen low carb pizza of some sort and I was thinking that I wish I had picked myself up a frozen pizza. Then I remembered I had all the ingredients to make these mini deep dish pizzas.
I was able to whip them up in no time and had plenty for a few lunches. They reheat really well so you can premake them for busy days.
I’ve not tried it yet but I’m sure they would be good frozen as well. I’d likely prebake the crusts and freeze them before finishing baking them. If I try it I will let you know how it goes and the best way to re-heat them. If you try it before I do, leave in the comments how you did it.
- 2 cup Homemade Bisquick (or regular Bisquick)
- 2/3 cup milk
- 1 cup pizza sauce
- 2 cups mozzarella cheese
- other toppings of your choice
- Preheat oven to 450.
- Mix baking mix and milk.
- Lightly grease muffin tin.
- Press dough into muffin tin.
- Bake for 5 minutes.
- Fill with sauce, cheese, and other toppings.
- Bake for 5 minutes or until crust is browned and cheese is melted.
- Let cool slightly before removing from muffin tin.
