These cookies are delicious and super easy to make. They look adorable and are the perfect Easter cookie. They are can easily be made gluten-free and are all-natural.
Before Halloween, I made White Chocolate Covered Mummy Cookies. My husband loved them and requested that I make a version of these cookies for every holiday.
I failed epically at that and haven’t made any since those cookies but that changed for Easter. I had been looking at my blog and noticed I didn’t have a lot of Easter blog posts and no Easter desserts. I love baking so I know at least the dessert part needed to change.
I started brainstorming ideas and remembered the mummy cookies and came up with a fun idea to do the same kind of things but with bunnies.
I had some natural dyes from Whole Foods that I wanted to use and I love Annie’s Bunny Grahams for Easter treats so the White Chocolate Covered Easter Cookies were born.
These cookies can also easily be made gluten-free. Annie’s has gluten-free Cocoa & Vanilla Bunny Grahams that can replace the regular chocolate ones I used. And replace the chocolate sandwich cookies with gluten-free versions.
I didn’t need mine to be gluten-free but I did want them to be all-natural. I used Trader Joe’s Joe-Joes, Annie’s Chocolate Bunny Grahams, Whole Foods white chocolate chips, and Whole Foods brand of all-natural food dyes.
It’s really easy to make a large amount of these or just a quick dozen. And as long as you are careful with the melted chocolate it can be a fun treat to make with kids. You can also just have the kids place the bunnies on the cookies if you don’t want them messing with the melted chocolate.
However, you decide to make these Easter cookies they are sure to be a hit. They are a new favorite in my house.
