Homemade muffins are an easy and delicious make-ahead breakfast. These chocolate chocolate chip muffins are sure to make your whole family happy.
One of my husband’s favorite treats is a chocolate chip muffin from a local coffee shop. He enjoys homemade chocolate chip muffins even more. I don’t make them for him nearly often enough, they are simple I just am not in the habit.
I promised him I’d make some for this weekend but decided to try a new recipe, chocolate chocolate chip muffins. Who doesn’t want even more chocolate?
I will actually be making more this week because the first batch is not going to make it to the weekend, that’s how good they are. Thankfully I made some extra homemade baking mix so I can mix a batch up in no time.
When I’m in the habit of freezer cooking I like to make a few batches of muffins and flash freeze them and then store them in a Pyrex container. They are such an easy thing to make, they freeze really well, and they are great for a little treat.
Both chocolate chip and chocolate chocolate chip muffins are even better when you warm them a bit before eating them. Serve with a cup of hot tea or coffee for the perfect morning treat.
Chocolate Chocolate Chip Muffins

These muffins use a homemade baking mix that make them very simple and they are also delicious.
Ingredients
- 2 cups homemade baking mix (or Bisquick)
- 1/3 cup sugar
- 2 tablespoons cocoa powder
- 2/3 cup milk
- 1 egg
- 2 tablespoons coconut oil (melted)
- 1 teaspoons vanilla extract
- 3/4 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 400 degrees.
- Mix sugar, baking mix, and cocoa powder.
- Add wet ingredients, don’t over mix.
- Fold in chocolate chips.
- Scoop into greased or lined muffin tins.
- Bake for 16-18 minutes, until golden brown.
Notes
Using an ice cream scoop is an easy way to fill your muffin tins. And save your butter wrappers, they are perfect for greasing pans.

If you freeze these muffins just thaw overnight and enjoy. I like them warmed for a few minutes in the toaster oven or microwave. Treats like this do make mornings easier when you aren’t much of a morning person.
