Freezer meal recipes and tips, using real, healthy ingredients!

Freezer meals are a great way to save time. They can also save you money by helping you avoid eating out on busy days. Many freezer meal recipes you will find use not the best ingredients. However, there are many great options out there using real food ingredients. Here are a few to get you started.

  • Use glass containers whenever possible. Especially when making acidic foods that can cause plastic to leach more.
  • When making a meal that freezes well double it. Use one for dinner and freeze the other. It’s a very simple way to build up your freezer meal stock.
  • Avoid canned ingredients and choose fresh, glass jars, or tetra-packs instead.
  • Another great item to freeze is cookie dough. When making cookies go ahead and scoop the dough into balls and place on a cookie sheet lined with waxed paper. Stick the dough in the freezer for about an hour or until the dough is frozen, place dough into a container and bake only what you need. This is also great for portion control!
  • Be sure to safely freeze and thaw food! Check out the FDA’s website for more information.
  • Label your food! Sure you know what it is now but you may not when you need it. Being in a hurry and not being sure what the meals in your freezer are, isn’t helpful! Click here for some free printable labels.

Homemade Cheddar Biscuits

There are a lot of mixes out there for making cheddar biscuits but the ingredients aren’t so great. Making your own from scratch is very easy and delicious. These biscuits are a favorite in my home.

Homemade Cheddar Biscuits

Makes 6 Biscuits

Ingredients

  • 1 cup of homemade baking mix (this recipe has disappeared, working to recreate it)
  • 1/3 cup of milk
  • 1 teaspoon garlic powder
  • 1/2 tablespoon of dried parsley
  • 1/2 cup cheddar cheese (plus a little extra for the top of the biscuits)

Directions

  1. Mix baking mix with garlic powder, parsley and cheese.
  2. Add in milk. Mix well.
  3. Top with extra cheese.
  4. Drop onto a greased cookie sheet and bake at 400ºF for 10-12 minutes.

Many recipes call for making garlic butter for the top but I find skipping this step and just putting butter on the finished biscuits is easier. I love to make up a large batch of the homemade baking mix to keep in the fridge, it makes this recipe super simple.

Happy National Coffee Day! (includes recipes!)

Today is National Coffee Day but you don’t have to rush out to the local coffee shop. Making your own tasty coffee drinks at home is easy and can reduce a lot of waste. Here are some of my favorite recipes.

Black Forest Blended Coffee

The other night I was making German sausage with onions and spaetzle, and wanted a German inspired dessert that was easy and not very heavy. Black Forest Cake is a great German dessert but not easy or light, so I made a blended coffee version.

Makes 3-4 servings

Directions:

Mix all of the ingredients, other than the whipped cream and cherries, in the blender until smooth. If desired, top with whipped cream and a cherry or two. And don’t forget to serve it with a glass straw and in a cute glass.

Quick and Easy Cheesy Tomato Sauce

My husband and I are not the biggest fans of red sauces, we prefer cream sauce. However, we both really love this red sauce. And it’s really easy. I like to serve it over pasta with meatballs or just some ground beef/bison. It’s one of my go-to-meals when I need something quick. Feel free to change the amount of cream cheese and heavy cream to fit your tastes.

Ingredients

  • 2 cups of spaghetti sauce (I use homemade but jar is fine)
  • 2 tablespoons of cream cheese
  • 3 tablespoons of heavy cream
  • Optional: meat and parmesan cheese

Directions

  1. Heat sauce and add cream cheese.
  2. Once the cream cheese is melted, add meat if desired.
  3. Once all is heated, add cream.
  4. Serve over pasta and top with parmesan cheese.

Chocolate Café Au Lait

I love to drink lots of hot drinks during the holidays. While tea is my favorite hot drink, I do enjoy coffee from time to time and this is one of my favorite ways to drink it.

Ingredients

  • 1/2 cup strong hot coffee
  • 1/2 cup of milk (a little less if frothing the milk)
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon sugar

Directions

  1. Brew coffee. I recommend a using a french press.
  2. While the coffee brews heat your milk, add the cocoa powder and sugar. Don’t let boil.
  3. Once the milk is heated and everything is well mixed, if you are frothing it go ahead and do so.
  4. If possible, pour the milk and coffee into the cup at the same time.

This can be made sweeter or less sweet depending on your taste. I highly recommend frothing the milk, it really does make a difference. You can get a milk frother for under $20 on Amazon. Some people may call this a mocha but mocha should be made with espresso so this is really just a chocolate version of café au lait , which is my favorite coffee drink. It’s a great drink for the holidays, you can even add a little bit of peppermint extract for an extra treat.

Peppermint Chocolate Chip Cookies

I love peppermint and put it in everything I can this time of year. And this year I decided that peppermint chocolate chip cookies would be a good idea, and it was! I have made a couple of batches already, some for my husband and I and I took some to my recycling coalition meeting. They have been a hit and they are very easy.

 

Ingredients

  • 2 sticks of softened butter
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 2 1/4 cup flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Chocolate chips, to your tastes
  • Crushed peppermint, optional

Directions

  1. Preheat oven to 375.
  2. Combine flour, baking soda, and salt, set aside.
  3. Cream butter and sugar until smooth.
  4. Beat in eggs in the butter mixture.
  5. Mix in vanilla and peppermint extracts in the butter and egg mixture.
  6. Slowly mix in flour.
  7. Fold in chocolate, and if you are using crushed peppermint add it as well.
  8. Scoop out balls of dough, place on cookie sheet.
  9. Bake for 9-12 minutes, until edges are slightly brown.
  10. Let cool and enjoy.

Homemade Chocolate Syrup

Most chocolate syrup contains nasty things like high fructose corn syrup and even the organic versions come in plastic. However, it’s quick and easy to make your own using natural ingredients. I make just a small amount since I’m the only one in the house that uses it but you can easily double it or even more.

Ingredients

  • 1/4 cup Cocoa Powder
  • 1/2 cup Sugar
  • 1/2 cup Water
  • 1/4 teaspoon Vanilla Extract
  • Touch of Salt

Directions

  1. Mix ingredients in pan.
  2. Heat on medium, stirring frequently until thickened.  It will thicken a bit more once it’s cooled.
  3. Cool and pour into container and store in fridge.

This syrup is great for ice cream, chocolate milk, homemade blended coffee, and more. I got the cute container I store mine in from Amazon, it’s a glass cruet from Anchor Hocking.

Blended Iced Coffee

Caramel Blended Iced Coffee
Makes 3-4 servings

Ingredients:
1 cup cold strong coffee
1 cup milk
4 cups ice
4 tablespoons sugar
8 tablespoons caramel sauce (recipe below)
Whipped cream and extra caramel sauce for the top

Directions:
Mix all of the ingredients in the blending until smooth.

Variation
To make a chocolate drink use 6 tablespoons of sugar and 6 tablespoons of chocolate syrup (recipe below). Use same amounts of coffee, milk, and ice.



Caramel Sauce

Ingredients:
3/4 cup sugar
1/4 cup brown sugar
1 tablespoon water
1/2 cup whole milk
2 tablespoon butter

Directions:

  1. Combine sugar, water, and butter in a large saucepan. Cook over medium heat for around 6-10 minutes. Don’t let it burn.
  2. Slowly add the milk and mix well. Keep cooking until it starts to thicken and looks like caramel. (It will think a bit more when it cools)

Chocolate Sauce

Ingredients:
1/4 cup cocoa powder
1/2 cup sugar
A tiny bit of salt (yes a tiny bit is a measurement)
1/2 cup water
1/2 teaspoon vanilla extract

Directions:

  1. Stir together.
  2. Boil 2-5 minutes, stirring rapidly, until sauce begins to thicken. (It will thicken more when it cools)
