Easy Chocolate Cake and Cream Cheese Icing

Abbie over at the Farmer’s Daughter is having a Birthday Cake Recipe Round-up for her birthday. I tend to do different desserts for birthdays but this is my favorite chocolate cake recipe and I have made it for several birthdays. I love this recipe because you can make a 8 in round cake, which is prefect for small families. You can double it if you want a full size cake but I always just make a small one. You can use any icing but I’m sharing one of my favorites.

Chocolate Cake
Ingredients
1 1/2 cups all purpose flour
1 cup sugar
4 tablespoons cocoa powder
1 teaspoon baking soda
1 teaspoon salt
6 tablespoons olive oil
1/2 teaspoon vanilla extract
1 tablespoon vinegar
1 cup cold water
Directions
Mix flour, sugar, cocoa, baking soda, and salt with a whisk until well blended.
Pour the oil, vinegar, vanilla and water, all at once, on top of the dry ingredients.
Stir until all the ingredients are throughly blended together but don’t over mix.
Bake at 350′F for 35-40 minutes or until a toothpick comes out clean.
Cream Cheese Icing
Ingredients
3 oz cream cheese, softened
3/4 cup powdered sugar
3 tablespoons milk
1 tablespoon butter, softened
1/2 teaspoon vanilla extract
Directions
In a small bowl beat all ingredients until smooth.

Groovygreenlivin.com: I often make the cake with just some powder sugar on top. Coconut ice cream on top would be good as well! And I like that it's dairy and egg free not because I don't eat those things but we run out often and then I have few baked goods I can make haha.
