Frugal Fridays

I’m trying to teach myself to sew by hand so I needed some fabric but didn’t want to buy some just to practice with so I went on a search for free fabric and guess what I found some! Now they are only small pieces but that works for what I need so I sent for it and it was here in less than a week! They have some awesome stuff, even hemp which made me VERY happy!

Chicken Cannelloni

This is one of my new favorite dishes and on my husband loves as well. I make his with chicken and mine without because I’m not a huge meat person (not a vegetarian, I just don’t like meat that much).
This serves 2 people but could be easily made bigger for more people.
Cannelloni Filling
4 ounces chicken breasts , cooked and shreaded
8 ounces ricotta cheese
1 1/2 ounces mozzarella cheese , shredded
Season to taste with garlic, salt, and basil
4 sheets lasagna noodles, cut in half
Cannelloni Sauce
Half a jar of your favorite spaghetti or marinara sauce
3/4 Cup (or so, I didn’t measure) Milk (or cream)
3 tablespoons of Parmesan cheese
Season to taste with lemon pepper, nutmeg, basil and garlic
3 tablespoons of Parmesan cheese (for top)
Put chicken, ricotta, mozzarella, and seasonings in a bowl and mix well.
Place cooked lasagna noodles on a cutting board, place an 1/8th of the filling in the center of each one. Carefully roll cigar fashion.
Pour all the ingredients for the sauce in a pan to warm and mix well.
Place the cannelloni side by side in a baking dish, pour sauce over them, sprinkle parmesan cheese over the top. Cover with foil and bake for 20 minutes at 350′f
This is what Justin and I had for dinner tonight, yes I know not baked ziti, my meal plans end up moved around but we do end up eating all the meals at some point in the month! We also had garlic cheese bread and veggies with it. I only wish there had been some leftovers for lunch tomorrow!
Lent… no not the kind from your dryer..

Some of you may have seen my picture with the ash cross and “keeping holy Lent.” Well that is because for you that don’t know it’s Lent right now, no I’m not Catholic, I’m Presbyterian. I thought I would ask if any of you are observing Lent and share what I’m doing.
First off I love myspace and spend a lot of my spare time on it so I gave it up for Lent. Most years past I have given up a food item but since I’m working to get healthy I really have already given up a lot of those things I have given up in the past and I wanted to do something different and challenge myself more. I have a lot of friends on there and belong to lot of groups, plus I’m kinda nosey and love to see what my friends are up to. So it’s been hard, it’s really hard when I get alerts that I have messages and such but I don’t even open them I just delete them. I have been very good.
Another goal I have for Lent is to finish reading my devotional. By the way I love this devotional and if you want something that you can just read a few pages a night this is the one for you. My hubby found it for me. It’s called “Moments of Peace in the Presence of God.”
I also want to finish “The Proper Feeding And Care Of Husbands” Dr. Laura before Easter as well.
So are any of you observing Lent, if so share with us what you are doing. And it’s not to late to join us!! I think God will understand.

Thankful Thursday

I am thankful for Zicam right now. I feel it has helped me keep from getting to bad of a cold. I hate being stuffy and I have a lot to do this week after taking care of my husband last week (he had the really bad flu). Oh yeah I’m also thankful that I didn’t get the flu!!! Thanks mom for teaching me how to take care of myself and keep from getting sick! Also thanks for giving me your immune system!

My Giveaway Winnings…. part 1

I finally got around to taking a picture of what I won from A Very Mary Design’s giveaway.
It’s a book called “The 20 -Minute Gardener”, a greeting card and a note from Mary Ann. I need to finish a few other books before I start this one but I will start it soon.
And I will be sure to post pictures of my garden.
Works For Me Wednesday

If you are like me and my husband you eat bread with almost every dinner. To make sure I have bread on hand for meals when I don’t want to make something from scratch, I buy a loaf of Italian bread and slice it and put two pieces in wax paper and then foil and then I freeze all of it in a ziplock bag and pull out just what I need when I start dinner and they are thawed by the time I’m ready to put some butter and such on them and stick them in the oven.
Being the tree hugger I am I re-use the foil and bag since they don’t touch the food.
Crunchy Tuesday

Since it’s flu season thought I would make my first post on here about Oscillococcinum. It’s a homeopathic medicine that helps reduces duration and severity of flu symptoms. Since it’s homeopathic it has no side effects or drug interactions.
I never get a flu shot (don’t even try and start that convo with me! haha) and still have only had the flu two- three times my whole life. (at least that I can think of) Only one of those times was really bad and I still was less sick than most other people that got it.
It tastes like sugar so not something I mind taking either. My husband started taking it when he started getting the nasty flu that is going around and was getting better in less than a week and now it’s been just over a week and other than a few symptoms that are sticking around (like being a bit stuffy and a cough at night) he is doing a ton better. A lot of people were very sick for two weeks or more with this flu so I truly believe this stuff works.
I have to point out that even if you had the flu shot you should keep this around. Flu shots aren’t 100% effective and this years is only 40% effective and this bad flu that is going around is one that you are not covered for.
You can get it at Wal-mart, amazon.com, and most health food stores. It’s made by Boiron which is a very good homeopathic company. Remember homeopathic stuff works best taken at the first sign so it’s best to keep some around.

Guessing they mean people that are still alive so I would have to say Ron Paul. He is just such an awesome person, I would also love to meet his wife. She is an amazing women. To hear her talk about Paul is just so sweet, she loves him very much and is so supportive.

Italy, Holland or Hungary

China would fall off the face of the earth… oh wait that’s not very nice and it’s not all of China just the leaders so I would end global warming.

Meal Plan Monday

Last week didn’t end up going as planned since Justin ended up sick all week. I’m not feeling great this week so we will see how this week goes.

I don’t use the veggies (we like our veggies on the side) and I use white American slices because that is the only sliced cheese I have around.
